Who doesn’t love a festive cookie!
These gingerbread men are perfect for those of us who are not-so-crafty or simply don’t have time to pipe out those intricate patterns! Simply top with your favourite Natural Fibre blend.
Cook up a batch and store in sealed containers for a wonderful DIY gift.
- 3 ¼ cups (390 g) flour
- 1 tsp salt
- ¾ tbsp ground ginger
- 2 tsp ground cinnamon
- ½ tsp allspice
- ¼ tsp ground gloves
- ¼ tsp ground nutmeg
- 2/3 cup (150 g) butter
- ¾ cup (150 g) brown sugar
- 2/3 cup (200 g) molasses
- 1 egg
- 2 vanilla beans (or 2 tsp vanilla extract)
- Milk or dark chocolate
- 4 to 5 tablespoons of Natural Fibre Orignal Seed Blend
- Goji berries (optional)
You can use your favourite festive cookie cutters to make an array of shapes and sizes! Simply adjust your baking time accordingly. See below, a rough time guide to help you out!
Cooking time guide:
150 mm (6 in) cookie size = ~11 minutes
100 mm (4 in) cookie size = ~8 minutes
50 mm (2 in) cookie size = ~5 minutes
Step by Step Instructions
Combine flour, baking powder, salt, ginger, cinnamon, allspice, cloves, and nutmeg in a large bowl. Set aside.
In another bowl, use a handheld or stand mixer fitted with a whisk attachment to mix the butter (medium speed until creamy), for about 1-2 minutes.
Add brown sugar and molasses and mix until combined.
Add egg and vanilla and mix until fully combined.
Add dry ingredients and mix on low speed just until combined.
The dough will be sticky and thick. Give it a few kneads by hand and divide in half. Form discs and wrap up tightly in plastic wrap. Chill for at least 3 hours.
Note, can be chilled for up to 3 days.
Preheat oven to 175°C (350°F).
Line 3 large baking trays with baking paper and set aside.
On a well-floured surface roll out dough discs into a 6 mm (¼ inch) thickness.
Cut out cookies with a 100 mm (4 inch)* gingerbread men cookie cutter and place on the prepared baking sheets with about 25 mm (1 inch) space in-between.
Bake for 8-9 minutes.

Allow to cool on baking try for 5 minutes then transfer to cooling rack to cool completely.
Ice with drizzled melted chocolate and sprinkle with Natural Fibre Original Blend and goji berries (optional).
