This high-fibre granola recipe adds a delicious crunchy texture to your morning breakfast. Experiment with a variety of dried fruit and nuts.

Ingredients

  •   1 cup Natural Fibre with Oats
  •   1 cup Natural Fibre with Psyllium
  •   ½ cup dried fruit (soaked)
  •   ½ cup shredded coconut
  •   1 teaspoon ground cinnamon
  •   1 teaspoon vanilla extract
  •   ¼ cup maple syrup

Serve with your favourite seasonal fruit and your choice of milk or yoghurt. We recommend fresh berries, mango or banana.

Step by Step Instructions

Step 1

Soak the dried fruit by placing in a small bowl and covering with boiling water for around 5 minutes. Drain the water from the bowl when you are ready to use.

Step 2

Preheat oven to 160°C.

Step 3

Place the Natural Fibre with Oats, Natural Fibre with Psyllium, water, coconut, cinnamon, vanilla, maple syrup and dried fruit (pre-soaked), in a large bowl. Stir well to combine.

Step 4

Lightly press the mixture flat into a tin lined with non-stick baking paper. Bake in the oven for 15 minutes.

Step 5

Remove tray from oven. Mix and break up the mixture with a spoon.

Step 6

Return to the oven and bake for a further 20-25 minutes or until golden-brown.
Mix occassionally to ensure the seed’nola is toasted evenly.

 

Step 7

Set the seed’nola aside to cool completely. The seed’nola will harden when cool.

Store in an airtight container and serve as desired.

Note: We recommend soaking the dried fruit so it doesn’t dry up and burn while baking. To soak the fruit, place it in a small bowl and pour enough boiling water over the top to cover the fruit. Soak for 5+ mins while you prepare the mixture. Drain the water from the bowl and then use the dried fruit in your baking.

Store in the refrigerator in an airtight container for up to 10 days.
